Tomatoes with Fried Eggs

Ingredients (2 serving)

2 eggs, beaten

131 g tomatoes, diced

2 cloves garlic, diced

1/4 Holland onion, diced

2 tablespoon tomato sauce

1/4 tablespoon sesame oil

1/4 cup of water

Olive oil

Salt









  1. Lightly drizzle the pan with olive oil. Sauté the garlic and onion till fragrant.















2. Add in the tomatoes. Cook till it soft.

















3. Set aside the sauté ingredients. Put in the beaten eggs in the pan.
















4. Cooks the eggs like a scrambled egg. Add in the tomato sauce.
















5. Stir-fried it until the chili sauce coated the eggs.
















6. Add in 1/4 water into the pan. Add in the sesame oil and sprinkle the salt.

















7. Served well.
















Notes

* The dish served best with steamed rice

* Use juicy and ripe tomatoes. I recommend Campari tomatoes as they are juicier, sweeter and less acidic
